For us, Veganuary is about promoting the fantastic power of vegetables, promoting healthier choices, and showcasing the incredible flavours you can create in entirely plant-powered meals.

Head Chef at The Pheasant Hotel, Holt; Ben Butler wanted to combine the nations love of Indian food with the excellent fresh produce available at The Pheasant Hotel, whilst also giving a nod to the endless amounts of vegetarian and vegan dishes found in South India.
Served with a beetroot houmous, and a crispy poppadum, this vibrant dish is the bread & butter of South Indian Cuisine. The array of aromatic flavours and range of textures for a hearty dish that leaves you craving more.
